Soup & Bread
My husband dear has been home all week working at our sawmill with the boys to make lumber for our new house project. That means they get huuuunngry!
So I have been spreading the table more than usual -- lunch needs to be hearty and filling to keep them going to dinnertime. I LOVE making homemade soups that warm all the way down to the toes! I have been baking bread almost daily to keep up with all the sandwiches.
So I have been spreading the table more than usual -- lunch needs to be hearty and filling to keep them going to dinnertime. I LOVE making homemade soups that warm all the way down to the toes! I have been baking bread almost daily to keep up with all the sandwiches.
Here is the recipe for one of my most favorite soups! This recipe is one I loved as a child and I have my family loving it now too!
BACON ~ CORN CHOWDER
Do all of this in one stock pot - so you only have one pot and not other pots and pans to clean up later.
1/2 lb. of bacon, fried crisp and cut in small pieces (I do this with kitchen shears while it is frying)
Cook 1 small onion, chopped in bacon drippings until limp.
Add in:
1 can of cream style corn
1 can of whole kernel corn
Add in liquid from corn too!
Trim peelings off 8 small potatoes. Cut in small dices. Add to the pot. Add in 3 cups water. Cook until potatoes are soft. Sprinkle soup mixture with 1 Tbsp. sugar, 2 tsp. salt, 1/8 tsp. pepper, 1/2 tsp. paprika. Add in 1 can tomato sauce, 1 can diced tomatoes and 1 can evaporated milk. Simmer 10 minutes and serve hot.
